behold my culinary genius!

I made Thanksgiving Soup the other day. I accidentally made way too much, which feels appropriate. Basically I made potato soup (thinly sliced potatoes, boiled until tender, most of the water skimmed out and about 2 C. of chicken stock and a whole lot of chopped spinach added) and dumped in handfuls of tiny turkey and cranberry meatballs (1lb. ground turkey, 2/3 C chopped fresh cranberries, 2 T parsley, 1 egg, one slice of tomato bread from Panera soaked in milk and shredded, some chopped onion, and various spices - mostly sage, I think). It was really really good. The meatballs were incredibly time consuming (I used this as a guide), but they are so tender and flavorful that I almost don't mind. I kept a larger (already cooked) patty in the fridge and it made a pretty amazing breakfast sandwich. Just sayin'.
