stir in 2 or 3 T of roasted red pepper, chopped small
add homemade pesto (basil/walnut) to taste
This was going to be a sandwich, but we were out of bread, and I didn't want to wait for rice, so I made some short spaghetti and mixed in the onions &c.
I think this is the perfect kind of meal for late summer - fresh, bright flavors, but still warm and soothing. It would be splendid with a lightly dressed cabbage salad and a peach.
I ate it before I realized that I should take a picture...
